Fly any plane you want:

Hold down the ALT button and go into 'Reference'. 
Keep holding it down. Click on the ghosted out 'Fly' 
button and you can fly any plane you wish.

Cheat:
------
While in the main menu hang on to the right: 
Ctrl, Alt, Shift then enter the plane preview 
section when you come to the plane that says 
"Atomic Moth" 
let go you can now go to free flight and you 
are in a moth. Your weapon, mothballs.
